Looking for the best BBQ Chicken Recipe, try this one!


1-2 whole chicken split in half

Smoky Beer Brine

1 bottle of Dos Equis Lager or your favorite lager

1 tablespoon RRR Rib and Chicken Rub Click here to purchase

1 tablespoon chopped garlic

1 tablespoon smoked paprika

3 tablespoons kosher salt

3 tablespoons sugar

1/2 teaspoon liquid smoke *optional

1 cup water

Combine all and mix well. Brine the chicken for a minimum of four and preferably eight hours.

Quick Smoky BBQ Sauce

1 ½ cups Ketchup

3 tablespoons honey

3 tablespoons brown sugar

1 tablespoon coarse Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons butter

1 tablespoon Worcestershire sauce

1 ½ teaspoons smoked paprika

½ teaspoon onion powder

1 teaspoon liquid smoke

1 teaspoon garlic powder

1 teaspoon kosher salt

1 tablespoon black pepper

Combine all in a non-reactive pan and simmer for 15 minutes on low heat.

Split your chickens and remove the backbone. Brine chickens four to eight hours. When done rub the chicken with our RRR Rib and Chicken Rub. Heat your grill to medium low heat, and one section off for indirect heat if your grill is prone to flare ups. Oil your chicken for the grill and season with your favorite BBQ rub. Grill your chicken watching for flare ups until it reaches an internal temperature of around 150 degrees. Then baste with the BBQ sauce lightly with a brush. Continue cooking until the internal temp is 165 degrees, watching that the sauce does not burn, remove from grill and allow to rest for a few minutes.

Great with a nice coleslaw and potato salad or nice garlicky oven browned potatoes.


This chicken goes great with a nice cold beer or a peppery Zinfandel.
