Smoked Chicken Thighs with Cherry Balsamic BBQ Sauce!

This one was a hit with my wife, she asked what is this BBQ sauce!


8 Chicken Thighs



Cherry Balsamic Barbecue Sauce

  • •2 cups prepared barbecue sauce, Texas style or Homemade

  • •½ cup cherry preserves

  • •2 tbsp balsamic vinegar I use the good stuff Traditional Balsamic Vinegar of Modena. This is the thick luxurious balsamic. (Some may say its too good for this, not me!)

  • •1 tbsp brown sugar or honey (NOTE optional if your BBQ sauce is sweet! )

  • •1 tsp coarse black pepper

  • •Pinch of kosher salt

Season up your chicken thighs with our RRR Rib & Chicken Rub an hour or more before cooking time. . Prepare your grill or smoker for indirect cooking at around 325 degrees. Prep up some wood chips/pellets or chunks depending on your grilling/smoking rig. I like hickory or cherry for this dish, but for more pronounced smoke flavors mesquite works.  Coat the chicken with olive oil Hot smoke until the internal temperature reaches 160°F.  When you rest them they will reach 165°F..

Meanwhile, combine all sauce ingredients in a small pan and simmer until glossy and slightly thickened.

During the final 15 minutes, brush the chicken with the cherry balsamic barbecue sauce, turning and glazing several times until beautifully caramelized. Rest for 15 minutes before serving with extra sauce, and your favorite sides.
